Catering for outdoor events – keeping food hot and cold
I run a small catering business that specializes in corporate events and outdoor parties here in Dubai, and one of the biggest logistical nightmares I face is keeping food at safe temperatures during transport and service, especially during the summer months when the heat is absolutely relentless. We’ve been using a mix of coolers, thermal bags, and chafing dishes, but honestly it’s a patchwork solution that doesn’t always work and I’ve had a few close calls with food safety inspectors that I’d rather not repeat. I’ve been looking at better options for bulk temperature control and I came across these heavy-duty storage units that seem to be designed specifically for keeping things at the right temperature for extended periods. I’m particularly interested in getting some insulated plastic containers for our main food items because they look like they would hold temperature much better than our current setup and they seem durable enough to handle the constant loading and unloading that comes with event catering. What I’m really trying to figure out is whether these can hold both hot and cold items equally well, or if they’re better suited for one temperature range over the other. Also, how long can I realistically expect them to maintain temperature in outdoor conditions when we’re setting up in the middle of a park or desert venue with no power for the first couple of hours? Any advice from other caterers would be hugely appreciated.
